| Mango Creme Brulee |
| A classic dessert that is easy and delicious. |
- serves 4
- 2 cups heavy cream
- 1/2 cup sugar
- 1 vanilla bean, split or 1 teaspoon good vanilla extract
- pinch of kosher salt
- 6 egg yolks
- 1 ripe mango, peeled and diced
- 4 ounces sugar

heat oven to 300 degrees
heat cream, sugar, vanilla & salt until it comes to a simmer. if using vanilla bean, scrape pod and add to cream.
Place egg yolks in a mixing bowl.
to temper the egg yolks, whip in little of the hot cream, slowly add a little bit more of the cream until its all incorporated. (adding the hot cream to fast will scramble the egg yolks)
in four 6 ounce oven proof brulee dishes or soup cups, distribute the mango evenly, place cups into a shallow baking pan.
pour the cream mix into each cup.
add hot water to pan, at least 1/4 up the side of the cups. cover the pan with foil.
carefully place pan into oven and bake for 25 minutes.
check the brulee, carefully shake a cup and it should giggle, similar to jello, if it is still to soft, bake in additional 10 minute increments until set.
remove from oven, let stand for 20 minutes then chill for at least 2 hours to set.
when ready to serve, sprinke top of brulee with 1 ounce of sugar, spread evenly.
the easy way to caramilize the top is with a propane torch, (just ask any do it your selfer to borrow one)
carefully burn the sugar until it gets a nice amber. let cool a minute and serve. |
