Megan Hylton, Catering Director

Southern through and through, Megan is quite accustomed to hospitality and service. Born in Memphis, TN, Megan grew up in Alabama and in her heart will always be an Alabama girl. She has “Crimson Pride” and will always cheer “Roll Tide”. Megan began her career in hospitality early by assisting a private caterer throughout high school. Megan attended college while bartending and being an assistant manager in several restaurants such as; Applebee’s, O’Charley’s and McCormick & Schmicks. Megan began working for Chili’s and became well rounded in the restaurant industry. While working for Chili’s she was in administration, bar & hospitality manager, kitchen manager, new store coordinator and finally she became general manager of her own restaurant in Mobile, AL.

Megan’s passion for traveling and food brought her to the keys. She was looking for the experience of working with great chefs. Megan embraced the keys and is proud to call them home. While maintaining several hospitality positions throughout the keys, she became a banquet captain for Green Turtle Inn & Kaiyo Grill. Due to her hard work and dedication Megan was promoted the Catering Manager.



In her free time Megan enjoys being social and out on the water whether it be for fishing, snorkeling or just a boat ride. She loves being in the Keys and looks forward to assisting you with any of your catering needs.

Terry Albury, Operations Leader


Terry has been an essential element in both Kaiyo Grill and Green Turtle Inn since their inception.  She was born in Lakewood, Ohio to a family of good, solid "old-fashioned" values; her parents were married for sixty years!  She has four brothers and a sister so she learned how to manage men early in life and by being a huge Cleveland sports fan she has learned how to manage catastrophe just as well - both of which make her an ideal restaurateur.  

Terry graduated from Dyke Business College (in a year to remain unnamed) with a B.A. in accounting. She moved to the FL Keys in 1985.  Proud and very active mother of Emily and John,

Terry tackles more duties and tasks between both restaurants than there is room to mention but her most notable includes her primary role as Financial Analyst for both Kaiyo Grill and our sister restaurant Green Turtle.


Always willing to do whatever it takes Terry is an invaluable part of the success of both restaurants and she has a great smile! Terry can regale you with tales of local Keys legend and lore.




Dan Bono, Restaurant Manager
Dan was born in Bergenfield, New Jersey, a suburb of New York City. As a child he excelled in sports such as swimming, football and wrestling. Dan graduated from Bergen College in New Jersey with a degree in Hotel & Restaurant Management. Dan also became a certified Sommelier from the Court of Masters.

 After college Dan longed for sunshine so he moved to the Gulf Coast of Florida. Dan began his career in Hotel & Restaurant Management by working for the Hilton in Marco Island. He later worked for The Registry Hotel in Naples. Dan then opened his own business a retail store and wine bar called “The Marco Wine Seller”. Dan sold his business after ten years and moved to Islamorada to be the manager of Kaiyo Grill.


Dan’s 20+ years of experience makes him an exceptional restaurant manager. He enjoys fishing, golf and spectator sports during his free time.

Emilio Molina, Executive Chef


Emilio was born in San Juan, Puerto Rico. He moved to Marathon as a baby. His father's business relocated them to New Jersey where his sister was born. Eventually his family settled  in Kissimmee, FL where he spent the majority of his childhood. He attended Osceola High School and is a proud Kowboy (yes with a K).
Emilio studied culinary arts at Le Cordon Bleu Academy and graduated with honors in 2009. During his time at the academy Emilio worked in numerous restaurants, all of which had sushi bars. When Emilio first began preparing sushi he worked under a Korean Chef. His primary duties were making rice and cutting vegetables. He worked hard and learned fast and within a short period was promoted to Sous Chef. He was then hired by our own Chef Matt at the Funky Monkey Wine Company, an eclectic restaurant located in Orlando. Here he studies with mentor Al Ruiz, a talented Hispanic Chef. He continued his career as a Sushi Chef in a few more restaurants working with numerous Japanese Chef's and furthering his knowledge and skills in the art of Sushi. In June of 2012 Emilio moved back to the Keys and took the position as Executive Sushi Chef of Kaiyo Grill & Sushi. Working again with Chef Matt Emilio is at home behind his Sushi bar.
Emilio continues to love the industry and the food he prepares. He is a true artist and takes great pride in the food he serves his guests. Come to Kaiyo Grill and let Chef Emilio create a deilcious creative masterpiece just for you.
